mocha cupcake

And now for a break from the deluge of fall spices...

It is Martha Stewart Cupcake Club time, and this month's pick is MOCHA CUPCAKES.

I am a sucker for beautiful photos and Martha has always had amazing photos in her magazines and books. I remember how her photos stood apart from other shelter/lifestyle magazines when she first came out with Martha Stewart Living in 1990. They were styled, lit and nuanced differently and gorgeously.

So, it is the photo of the mocha cupcake which enticed me to make it. I was captivated by the frosting. Yes. Frosting.

penguin cupcakes

 Penguins were this year's birthday treat for The Son.
Hello, Cupcake! provided the inspiration and how-tos.
Though it took The Daughter and me a couple of hours to get them done,
they were well worth the effort.

You will need to gather quite a few items to create them:
 donettes, donut holes, starburst, tub of white frosting, marshmallows,
chocolate wafer cookies, mini chocolate chips, and of course, cupcakes.


Donettes are the body.

 Slice off the tops of the cuppies and the donut holes,
 so that they will stack flat.

march of the penguins

It's the Son's 11th Birthday today. This is his last year in elementary school, which means it's the last year that I can make goodies for him to bring in. (Cue the music, sob and sniffle... kids grow so fast!) After looking through all the possibilities in Hello Cupcake, he chose penguins. We had a little fun with them and created a few variations.

brown sugar pound cake

It's Cupcake Wars at The Big Girl's school. This year, there are two categories: Taste and Looks.

While I think this cupcake doesn't look too bad, it definitely won't be entered into the latter category. What it has going for it is butter, butter, and butter. It's a beautiful buttery pound cake, with a dense, moist texture, topped with tangy cream cheese frosting and a little demarara sugar crunch. Will it hold up against the onslaught of chocolate and red velvet cuppies? We'll see...

Meanwhile, I'll enjoy a bite or two, with a pot of earl grey tea.

chocolate spice minicakes

Like my taxes, these minicakes were done at the last minute.

Nothing like a deadline to galvanize you into action, and since my deadline for this Martha Stewart Cupcake Club assignment is the 15th— today!— I'm scrambling to bake a treat, write the post and celebrate finished taxes. It helps that the recipe is a quick one. Since they're going to a meeting, I made them in minis, the easier to pick them up and pop into the mouth.

I will definitely revisit this recipe come autumn, as the cakes are redolent with wonderful spices. I've never mixed gingerbread with chocolate before and wasn't sure how I'd like it. I remain rather ambivalent about the combination, but I know there are a legion of chocolate fans out there who love it any which way, so this is a happy marriage for you folks. I'd read that the molasses taste was a bit strong, so I reduced the amount of molasses a bit and added some vanilla.


I baked the cakes with liners and without, and I had to show you the different outcomes...


Weird, right? Most of the unlined ones came out looking like they developed some kind of boil smack in the middle.

With a little confectioner's sugar and a little candied ginger, the bumps are camouflaged and the minicakes are gussied up and set to go. Thanks to Julie of Little Bit of Everything for choosing this month's recipe. You can find the recipe on her blog.

lamb cupcakes

Easter is right around the corner. The Sweet SIL is hosting, and I volunteered for dessert duty.  I need something that can be made the day before, as I and The Sibs will be spending the weekend+ cleaning out my dad's house (which is a long saga, involving multiple dumpsters and countless trips to recycling... let's just say he's a hoarder.)

ginger and molasses cupcake {msc}


"What was I thinking?" is what I asked myself as I looked at this recipe last week. A few months ago, I chose this cupcake for the Martha Stewart Cupcake Club (to which you can belong, too- just check it out here.)  I suppose that ginger could be an autumnal sort of flavor, particularly paired with pumpkin or pear, (try saying that five times fast!) but when you add molasses with it, it starts heading into the direction of gingerbread. I must have been in some sort of fog, or I was being extremely forward thinking in having an option for wintertime.  Let's just choose the latter reason.

pumpkin brown butter cupcakes

If you're a baker, you've probably already tried a pumpkin recipe this fall. Maybe a loaf or two of bread? Whoopie pies with cream cheese filling? Perhaps a pie?

May I suggest to you another baked good to add to your arsenal of autumn sweets? These cupcakes, I admit, have the texture more akin to bread or a muffin, but there is an ingredient that makes this oh-so-special and worth a try.

Browned butter. You use it not just in the cake, but also in the icing. Lick the bowl, good to the last drop, positively, delectably delicious. And oh, the aroma! The nutty, rich smell of the butter...

The flecks of milk solids are turning golden at the bottom of the skillet.

You can see some of the flecks in the batter.

Vanilla is used in the frosting, along with browned butter,
confectioner's sugar, and a smidgen of milk.

Even without the icing, the cupcake/muffin is pretty darn good.

With the icing, however, the cupcake is divine.

Tastewise, I felt it was little flat. I would add at least a quarter teaspoon each of ground ginger and cardamom to the spices. Also, I didn't use sage in the recipe. I didn't want that herbal note with my pumpkin cake.

Pumpkin-Brown Butter Cupcakes
adapted from Martha Stewart's Cupcakes


¾ cup unsalted butter, room temperature, plus more for tins
1⅔ cups all-purpose flour, plus more for tins
¼ cup fresh sage leaves, cut into chiffonade (optional)
2 teaspoons baking powder
1 teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon freshly grated nutmeg
¼ teaspoon ginger
¼ teaspoon cardamom
1/8 teaspoon ground cloves
1 cup canned pumpkin puree
1 cup packed light brown sugar
½ cup granulated sugar
2 large eggs
Brown-Butter Icing (recipe below)

Preheat oven to 325ºF. Brush standard muffin tins with butter; dust with flour, tapping out excess. In a sauce pan, melt the butter over medium-low heat. Add the sage, if desired, and continue to cook, swirling occasionally, until butter turns golden brown. Skim foam from top, and remove from heat. Pour into a bowl to stop the cooking, leaving any burned sediment behind; let cool.

Whisk together flour, baking powder, salt, cinnamon, nutmeg, and cloves. In another bowl, whisk together the pumpkin puree, both sugars, eggs and brown-butter mixture. Add flour mixture, and whisk until just combined.

Divide batter evenly among lined cups, filling each three-quarters full. Bake, rotating tins halfway through, until a cake tester inserted in centers comes out clean, about 20 minutes. Transfer tins to wire racks to cool completely before removing cupcakes. Cupcakes can be stored overnight at room temperature, or frozen up to 2 months, in airtight containers.

To finish, dip top of each cupcake in icing, then turn over quickly and let set. Cupcakes are best eaten the day they are glazed; keep at room temperature until ready to serve.

Brown Butter Icing

½ cup (1 stick) unsalted butter
2 cups sifted confectioners' sugar
2 teaspoons pure vanilla extract
2 tablespoons milk, plus more if needed

Melt butter in a small sauce pan over medium heat, swirling pan occasionally, until nut brown in color, about 10 minutes. Remove from heat, and pour butter into a bowl, leaving any burned sediment behind.

Add confectioners' sugar, vanilla, and 2 tablespoons milk to brown butter; stir until smooth. If necessary, add more milk (up to 2 tablespoons) a little at a time, just until icing is spreadable. Use immediately.

s'mores cupcakes

Toasted marshmallow, chocolate, graham cracker ~ an amazing combination forever associated with campfires, summertime and fun. The Daughter and I present it to you in cupcake form!

We baked it for her 13th birthday. I cannot believe she's a teenager, and indeed, the years fly by. She has grown to be a wonderful little lady and sous chef; I love having a baking buddy in the kitchen. Now, if only I could convince her that washing dishes is just as fun as creating the mess...

I know a girl who would eat peanut butter and jelly sandwiches every school day, day in, day out. I wish My Kids were that easy. Said girl would love this baking club assignment, though I wonder if she'd want one after her sandwich lunch. Maybe for breakfast?

The Dear Son requested a special birthday treat- cupcakes in the form of an alligator. Hello, Cupcake! is a veritable treasure trove of AMAZING creations, and it had Old Swampy in its lineup. After hunting down all the decorative candies and treats, we were set.

Cupcake Wars.

The Kids love watching the show, and now, The Daughter gets to participate in one. Today, her middle school is hosting a fundraiser and competition — game on!

She needed to find a cupcake both eye-appealing and scrumptious, and she spent a good hour perusing Hello Cupcake! and Martha Stewart's Cupcakes looking for The Perfect Cupcake.  The chocolate salted-caramel ones seemed most delicious, and we're hoping they'll win over the judges' hearts and taste buds.

cookies and cream cheesecakes

I have a guest blogger today, who baked a yummy dessert.  Enjoy!

Hi. According to my mother's blog, I'm The Daughter. As my mother is not feeling well, I decided to step up as an amateur baker and blog for her today.

This morning, I hunted around the mess of cook books we have and pulled out a rather new addition (compared to the other ones...ANCIENT!!!) - Martha Stewart's Cupcakes. After skimming the book, I located an ideal recipe, one that is not that hard, but delicious enough for this state-of-the-art blog— Cookies and Cream Cheesecakes. The final product was beautiful and positively scrumptious.

These little bites of perfection are incredibly creamy with a perfect, fluffy texture.

marshmallow turkey cupcakes {martha stewart cupcakes club}

The most pressing question of the day: what do you call that red thing that hangs off of the turkey's beak?

Thank goodness for the internet.  At first I thought it was a wattle, but now I know it's a snood.  (The wattle hangs down the neck.)

The second most pressing question of the day: how long will it take me to make these cupcakes?  I spent the better part of an uncharacteristically glorious 60º November day cutting up sticky fruit slices (I subbed those for swedish fish, which I could find only in red,)  toasting coconut (you have to keep a watchful eye over it- I've burnt more pans than I care to admit) and

assembling turkeys.
(I used chocolate jimmies for eyes, candy corn for beaks,
and fruit slices for feathers and snoods.)

Toasted coconut marshmallows proved to be a problem to find (we looked in five different stores.)  With a little simple sugar syrup and a lot of busy work, The Daughter made the eighteen turkey heads.


The resulting flock of turkeys: time-consuming but worth it.

spiderrific cupcakes


This week has been filled with visions of pumpkins, spiders, skulls and All-Things-Halloween.  For his class party, The Son specifically requested spider cupcakes.  We scrolled many, many images on Google and found The Perfect Spider on M&M's website.

out-of-this-world cupcakes


Cyclops

The Daughter always gets gyped.  Her birthday inevitably falls on the first or second day of school, right after Labor Day.  We have been perennially poor planners, and as a result the parties have been few and far between.  This summer, we got our act together and gathered a few kids to go rock climbing and to sleepover. For her birthday cake, she wanted some Alien Invasion Cupcakes.

I, riddled with Terrible Mom guilt, would definitely execute that request.  With a little help from Hello Cupcake!, we were able to pull off some cute ones. (As an aside, have you ever thumbed through that cookbook? I never imagined one could do so much with Sunkist fruit gems.)

Who knew that just a few ingredients:

cupcakes, frosting, food coloring, doughnut holes, marshmallows, tic tacs, and Twizzlers

could produce such delightful creatures!

After applying a thin layer of frosting to the cake, I stacked a doughnut hole atop a halved marshmallow, applying a little frosting in between the two.  After adding frosting to the cracks,which smoothed out the surfaces, they were put into the freezer for 15 minutes.  Then, I dunked them upside down in frosting that had been heated up for 10 seconds (and was therefore a bit more runny. A one-cup pyrex is perfect for that job.)
