I came, I saw, I laughed, I baked. I was wandering around on pinterest
and spotted the bunny butt ... it was love and giggles at first sight. What a
hilarious, happy, smile-inducing cake, and I don't think one can say that
about many cakes. Can you?

morton's carrot cake
I am always on the lookout for a good carrot cake recipe. My favorite up to now has been the Silver Palate one (a future post!), but using the almighty Google, I found this winner. Served at Morton's Steakhouse and based on its CEO's mother's recipe, this dessert stands out because buttermilk is used two-fold. First, in the cake batter and
second, cooked with butter for a glaze, which makes the cake extra moist.

bill's big carrot cake {bwd}
This week for the Baking with Dorie baking club, I got to choose the recipe. Yay! It's fun to sit, dream, imagine and salivate through her cookbook, but in the end, it is a rather difficult task. Dorie's tome is huge. Doorstop huge. More than three hundred recipes huge— and I had to whittle it down to one.
The deciding factor was what I thought the The Husband liked. Hehe, maybe I should have asked him first...

{sms} carrot cake
I had two events that I was baking for this past week and needed to get a head start on the goodies. The Pistachio Linzer Cookies had to be put on the backburner while I tried out Melissa Murphy's Carrot Cake.
According to some of the bloggers from Sweet Melissa Sundays, the cake was lacking in flavor. So, I decided to add some pineapple and coconut.

The result was moist, flavorful, and delicious.
