cookies and cream cheesecakes

I have a guest blogger today, who baked a yummy dessert.  Enjoy!

Hi. According to my mother's blog, I'm The Daughter. As my mother is not feeling well, I decided to step up as an amateur baker and blog for her today.

This morning, I hunted around the mess of cook books we have and pulled out a rather new addition (compared to the other ones...ANCIENT!!!) - Martha Stewart's Cupcakes. After skimming the book, I located an ideal recipe, one that is not that hard, but delicious enough for this state-of-the-art blog— Cookies and Cream Cheesecakes. The final product was beautiful and positively scrumptious.

These little bites of perfection are incredibly creamy with a perfect, fluffy texture.


Cookies and Cream Cheesecakes
from Martha Stewart's Cupcakes

42 cream-filled chocolate sandwich cookies such as Oreos
     - 30 left whole
     - 12 coarsely chopped
2 pounds cream cheese, room temperature
1 cup sugar
1 teaspoon pure vanilla extract
4 large eggs, room temperature, lightly beaten
1 cup sour cream
pinch of salt

Preheat oven to 275°F. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.

With an electric mixer on medium-high speed, beat cream cheese until smooth scraping down sides of bowl as needed. Gradually add sugar and beat until combined. Beat in vanilla.

Drizzle in eggs, a bit at a time, beating to combine and scraping down sides of bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.

Divide batter evenly among cookie-filled cups, filling each almost to the top. Bake, rotating tins halfway through, until filling is set, about 22 minutes. Transfer tins to wire racks to cool completely. Refrigerate (in tins) at least 4 hours (or up to overnight). Remove from tins just before serving.

n.b. These taste best when eaten day of, purely because the Oreo cookie base still has some crunch to it. They are still good a few days later, albeit with no crunch.

  2. Blogger Brother says Blogger Daughter will need to make some more of these for her uncles and aunts. Blogger loves the beurre, and so does the Brother, but cream cheese is great too. fromagista?

    fromagista if only for cream cheese. I think BD doesn't like cheese a whole lot.
